Ingredients of Blueberry Cheese Pastry

  • For blueberry compote:
  • 25 gms sugar
  • 15 gms pectin
  • 2 gram blueberry
  • For cookie base:
  • 50 gms butter
  • 25 gms icing sugar
  • 75 gms flour
  • For cheesecake mix:
  • 200 gms cream cheese
  • 60 gms icing sugar
  • 45 gms cooking cream
  • 1 Egg
  • 10 gms corn flour

How to Make Blueberry Cheese Pastry

  • 1.For blueberry compote, place the blueberries and 2/3 of sugar in a cooking pan and start cooking over a slow flame.
  • 2.Mix 1/3 sugar and pectin and keep aside.
  • 3.When it starts to boil, add the pectin mix and cook for 1 min and keep aside to cool.
  • 4.For cookies base, place the butter and sugar in a bowl and mix well. Add flour and mix well like a dough.
  • Prepare cheesecake mix:
  • 1.Pre heat the oven at 160 degrees C for 15 minutes.
  • 2.In a mixing bowl place cheese and sugar and mix slowly. Once both are mixed well and smooth, add egg and mix slowly.
  • 3.Add cooking cream and mix well, then add corn flour and mix.
  • 4.In a 2 inch baking ring, line the cookie base, bake it till golden color and let it cool.
  • 5.Pour the mix on top of the cookie base and bake it at 155 degrees C in a water bath for 30 minutes.
