Ingredients of Blueberry Pancake

  • 6 tbsp Soy Flour
  • 3 tbsp Soy Milk
  • 1 Egg
  • 1/2 tsp Baking Powder
  • 2 tsp Sugar
  • 3-4 drops Vanilla Essence
  • Water
  • 1 cup Canned Blueberries

How to Make Blueberry Pancake

Whisk together soya flour, soya milk, baking powder, sugar substitute and one egg yolk to make a batter of dropping consistency. Keep aside for 15 minutes.

Whip the egg white until fluffy. Fold into the batter.

For the maple syrup, heat some water, maple extract and sugar substitute over a medium flame.

Heat a pan, spray some olive oil and spoon the batter to make a pancake.
5.
Once the underside is half done, sprinkle the blueberries on top and flip.
6.
Serve hot sprinkled with sugar substitute or with the maple syrup.
