About Blueberry Pancake Recipe: A perfect breakfast option. Blueberry pancakes with soya flour and soya milk make a filling, healthy and yet a delightful eat for those morning treats.

Ingredients of Blueberry Pancake

  • 6 Tbsp soya flour
  • 3 tbsp soya milk
  • 1 Egg
  • 1/2 tsp baking powder
  • 2 tsp sugar substitute
  • 3-4 drops maple extract or vanilla essence
  • Water
  • Canned blueberry

How to Make Blueberry Pancake

  • 1.Whisk together soya flour, soya milk, baking powder, sugar substitute and one egg yolk to make a batter of dropping consistency. Keep aside for 15 minutes.
  • 2.Whip the egg white until fluffy. Fold into the batter.
  • 3.For the maple syrup, heat some water, maple extract and sugar substitute over a medium flame.
  • 4.Heat a pan, spray some olive oil and spoon the batter to make a pancake.
  • 5.Once the underside is half done, sprinkle the blueberries on top and flip.
  • 6.Serve hot sprinkled with sugar substitute or with the maple syrup.
