Ginger beer is a sweetened and carbonated non-alcoholic local beverage from South Africa. Prepared at home, ginger beer carries great cultural significance and is a part of all occasions – from birthdays to weddings to funerals. Small townships in South Africa prepare ginger beer and store them for sale purposes, too. Another interesting way to enjoy the beer is by freezing them to prepare ice-lollies by adding fruits and berries. Being a non-alcoholic beverage, ginger beer brings everyone together.

Ingredients of Ginger Beer
- 4 Kg Fresh ginger (grated)
- 500 gram Lemon juice and zest
- 2 kg (sugar) Agave syrup or brown sugar
- 3 Pineapples Pineapple peels
- 25 litre Water
- 75 gram Cream of tartar
- 10 Sachets Instant Yeast
- 500 gram Raisins (seedless)
How to Make Ginger Beer

Place all ingredients except for the raisins and pineapple peels in a large heavy based pot and bring to simmer. Do not boil.

Once the pot reaches a point of simmer remove from the stove and leave the ingredients to ferment overnight in the pot.

Once cooled down (the following day) , strain all the grated ginger and transfer the ginger beer into glass juice dispensers. Add the raising and pineapple peels, they will further activate the fermentation process.
4.
Keep chilled and serve when required.
