Ingredients of Goan Brinjal Pickle (Baingan Ka Achar)
- 0.5 Kilograms Brinjals
- 2 Sprigs of Curry leaves
- 50 gram Garlic
- 1 cup Vegetable Oil
- 4 tsp Sugar
- 6 tsp Salt
- 0.75 cup Vinegar
- 15 Red dried Kashmiri chillies
- 1 tsp Mustard Seeds
- 0.25 tsp Fenugreek Seeds
- 1 tsp Cumin Seeds
- 1 inch Ginger
- 0.5 tsp Turmeric powder
How to Make Goan Brinjal Pickle (Baingan Ka Achar)

Wash and cut brinjals into pieces. Season with salt and place in a sieve for 30 minutes. Drain out any moisture released.

Blend vinegar, red dried Kashmiri chillies, mustard seeds, fenugreek seeds, cumin seeds, garlic, ginger and turmeric powder to form a paste.

Take a skillet/fry pan and add two tablespoons of oil. Flash-fry brinjal pieces on high heat for a few minutes. Take these out of the pan and plate of a plate layered with paper towels.

Heat oil in the pan and add curry leaves and chopped garlic. Add the spice paste and cook till the oil starts to separate. Add the fried brinjal pieces, sugar and salt. Simmer on low heat for a few minutes.

Cool and store in a sterilized glass bottle. Close the lid tightly and let it sit for a week in a cool place before consumption.
