This traditional Rajasthani dessert is infused with lemongrass and coconut to give it a refreshing plant-forward flavour profile. This recipe uses jaggery and coconut milk instead of refined sugar and regular milk making it even more nutritious.

Ingredients of Hulled Sweet Wheat
- 1/2 cup Hulled wheat
- 1/4 cup Jaggery
- 3 cups Coconut milk
- 4-5 stalks Fresh lemongrass
- A pinch of Saffron
How to Make Hulled Sweet Wheat

Soak the hulled wheat in water for 1 hour.

Strain the wheat and transfer to a pressure cooker. Add 1 cup of water and cook under high pressure till the wheat is cooked (5-6 whistles).

In a separate saucepan, add the coconut milk, jaggery, lemongrass stalks and put on medium heat. Keep stirring gently till the milk reduces to half.

Pass the reduced milk through a sieve to remove lemongrass stalks and get a smooth thick mix. To this add the pressure cooked wheat & saffron and further cook it for 20 mins.

To serve (can be served hot or cold), spoon it onto a plate and top with some candied lemons.
