Ingredients of Kiri Bath

  • 500 gm raw basmati rice 1 fresh coconut or (nestle maggi 100 gm coconut milk powder) 9 cups of water (measured with a tea cup) 2 leveled tsp salt

How to Make Kiri Bath

Grate the coconut and extract the milk by adding 3 cups of water. Strain the milk. Keep this first milk extract aside. Add 3 cups of water again to extract the milk out of the same grated coconut. Then for the third time add another 3 teacups of water to the same grated coconut. Extract more milk. Now add the 3rd and 2nd extracts of milk after straining it to the washed rice, add two leveled teaspoons of salt and cook it on a very low fire. Once the rice is cooked lastly add the 1st extracted thick milk. Note that now you must cook the rice until the coconut milk is absorbed on a very low fire. Keep stirring it well with the handle of a kitchen spoon. When the rice is cooked put it onto a flat plate and spread it by patting it with a banana leaf or polythene. Cut the milk rice into diamond shapes and serve. It would look attractive and colourful if served on a banana leaf kept on a flat dish.
