Kuska biryani is a drier version of biryani but what makes it so popular is that it can be cooked in no time and tastes absolutely delicious. It tastes best when paired with salan, gravy or raita.

Ingredients of Kuska Biryani
- 1 cup Rice
- 2 cups Vegetable or chicken stock
- 1 Onion, sliced
- 2 Tomatoes, chopped
- 2 tbsp Curd
- 1 tbsp Mint leaves
- 1 tbsp Coriander leaves
- 1 Bay leaf
- 3-4 Cloves
- 2-3 Cardamoms
- 1 inch Cinnamon stick
- 4-5 Black peppercorns
- 1/2 tsp Cumin seeds
- 1-2 Green chillies
- to taste Salt
- to taste Red chilli powder
- 1 tsp Coriander powder
- 2 tsp Garam masala powder
- A pinch of Turmeric powder
How to Make Kuska Biryani

Soak rice for at least 15 minutes and boil till almost done.

Saute all the whole spices in ghee, add green chillies, ginger-garlic paste and onions and saute till brown.

Add tomatoes, herbs, salt and all spice powder and let them cook.

Add curd and mix well. Cook for another minute or two. Then, add stock and let it come to boil.

Lastly, add the par-boiled rice, cover the lid of the pot and cook for another 10-15 minutes.
