Mutton Gola Kebabs Recipe: Gola Kebabs are known for their round or oval shape. These are also much softer, tender, melt-in-mouth and juicier compared to seekh kebabs. It is a popular recipe prepared for Eid ki Dawat.

Ingredients of Mutton Gola Kebabs

  • 750 gms mutton mince
  • 70 g mutton fat/2 tbsp butter
  • 1.5 tbsp ginger paste
  • 1.5 tbsp garlic paste
  • 1 tbsp raw papaya paste
  • 1.5 tsp salt
  • 1 tsp red chilli powder
  • 1 tsp chaat masala
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 0.5 tsp turmeric powder
  • 2 tbsp gram flour (roasted)
  • 1 tbsp cornflour
  • 2 medium golden fried onions
  • coriander leaves
  • Mint leaves
  • 4-5 green chillies
  • 1 lemon juice
  • 1 Charcoal
  • Oil for frying
  • Onion rings and fried green chillies for garnishing

How to Make Mutton Gola Kebabs

Take an electric grinder and add mutton mince, mutton fat (or butter), ginger paste, garlic paste, raw papaya paste, all the powdered spices, fried onions, roasted gram flour, cornflour, coriander leaves, mint leaves, green chillies, and lemon juice.

Fine grind all the ingredients and transfer it to a bowl.

Place a piece of foil on the kebab mix and add a hot coal on it. Drizzle oil and it will immediately smoke up. Cover with a lid for 15 minutes so that it absorbs the smoky flavour.

Now shape the kebabs by first making round balls of kebab and then inserting a skewer. Give it an oval shape and then remove the skewer.

Heat oil in a pan and fry the kebabs from all sides until golden brown.
6.
Garnish it with onion rings, fried green chillies and serve with lemon wedges.
