Ingredients of Red Beans Vegetable Fajitas

  • 200 gms Red beans (Rajma) boiled Quantity Red beans (Rajma) boiled
  • 50 gram Coriander , chopped
  • 4 nos Flour tortilla
  • 100 gram Red, green, yellow pepper
  • 100 gram Tomato cut in to wedges
  • 100 gram Onion cut in to wedges
  • 20 gram Garlic crushed
  • 5 gram Red Chilli powder
  • 5 gram Cumin powder
  • 3 nos Green chili
  • 2 ml Lemon juice
  • 20 ml Ref. oil
  • Salt to taste
  • 50 gram Mayonnaise

How to Make Red Beans Vegetable Fajitas

To make fajita mix, take two or three strips from each color of pepper and finely chop them. Set aside.

Heat the oil in a frying pan and fry the remaining pepper strips and onion until soft and starting to brown at the edges. Cool slightly and mix in the chopped raw peppers.

Add garlic and cook for 1 min, then add the spices and stir. Cook for a couple of mins more until the spices become aromatic, then add half lime juice and season.

Transfer to a dish and keep warm.

Keep black beans into the same pan then add the remaining lime juice and plenty of seasoning.
6.
Stir beans well to warm them and help them absorb any flavors of the fajita mix, then stir through the coriander.
7.
Warm the tortillas in a microwave or in a low oven, then wrap them so they don’t dry out.
8.
Serve the fajitas with chili mayonnaise
