Sesame fingers make for a delectable snack to enjoy with your evening cup of chai. Garnish them with dry herbs and serve hot with ketchup or barbecue sauce!

Ingredients of Sesame Fingers

  • 2 large potatoes, boiled
  • 1 cup mixed vegetables, chopped (carrots, beans, sweet corn)
  • ½ cup capsicum, chopped
  • ½ spring onions, chopped
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • Salt (as per taste levels)
  • 1 teaspoon black pepper
  • Red chilli powder (as per taste levels)
  • 1 cup all-purpose flour (maida)
  • Water (as per requirement)
  • 4 multigrain bread slices
  • 3 tablespoons sesame seeds
  • Dry herbs (for garnish)
  • Oil

How to Make Sesame Fingers

Take a pan and heat some oil in it. Now add chopped spring onions and mixed vegetables (beans, carrots, and sweet corn) in it. Stir well. Now add chopped capsicum to the pan and stir well.

After letting the veggies cook for 3-5 minutes, add ketchup, red chilli powder, salt, and black pepper. Mix well so that all the ingredients are well combined.

After 2 minutes, mash the boiled potatoes and add them to the mixture. Make sure to mix everything well so that the potatoes absorb the flavour and change their colour. Turn off the burner and let the mixture cool down.

Now take 4 multigrain bread slices and gently put the potato mixture on it. Be mindful not the overfill it but only stick the appropriate amount of mixture on it. Keep it aside.

In a bowl, take all-purpose flour (maida) and make a slurry out of it by adding water. Dip the bread slices in it and top it with some sesame seeds. Repeat the process with other slices.

Heat some oil in a frying pan. Now gently put the potato sesame bread in it and deep fry until it’s golden brown.

Remove the sesame fingers from the oil and put them on a kitchen tissue to absorb extra oil. Garnish with dry herbs and serve hot with ketchup or barbecue sauce!
