Ingredients of Aranchini Balls

  • 180g arborio rice
  • 30 ml olive oil
  • 30 g chopped garlic
  • 50 g chopped onions
  • 10 ml white wine
  • 600 g cheese mix
  • 0.6 g chilli flakes
  • 0.4 g dried oregano
  • 0.4 g dried rosemary
  • 6 g aromatic seasoning
  • 360 g water
  • 50 g cheese sauce
  • 40 g fresh cream
  • Refined oil, for fryng
  • Fry batter, for dipping
  • Bread crumbs, for coating

How to Make Aranchini Balls

In a large saucepan, sauté chopped onions and garlic in olive oil until translucent. Add arborio rice and sauté for an additional 2-3 minutes until the rice is lightly toasted.

If using wine, pour it into the pan. Cook until mostly evaporated. Add aromatic seasoning, rosemary, and oregano one at a time, stirring frequently. Allow liquid to be absorbed before adding more. Continue until the rice is cooked (approximately 18-20 minutes).

Once rice is cooked, stir in cheese sauce, aromatic seasoning, and cream until well combined. Season with salt and pepper to taste. Allow the mixture to cool.

Once the rice mixture is cool, take a portion (10g) and shape it into a ball. Flatten slightly to make a disc shape. Make an indentation in the center of each ball and place a small amount of cheese mix (10g) in the center. Close the rice around the cheese, forming a ball.

Dip each rice ball into homemade fry batter and then roll in breadcrumbs, ensuring even coating. Fry the aranchini in portions until golden brown and crispy on the outside (approximately 2-3 minutes per portion).

Remove aranchini with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Serve the aranchini balls hot, optionally with marinara sauce or your favorite dipping sauce.
