Ingredients of Zucchini Loaf

  • 3 Eggs
  • 200 ml Olive oil
  • 200 gms Sugar
  • 300 gms Zucchini, shredded
  • 300 gms Plain flour
  • 1 tbsp Ground cinnamon
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 50 gms Walnuts, chopped

How to Make Zucchini Loaf

Pre-heat the oven to 350F/180C/Gas 4. Grease 2 loaf pans.

In a large bowl, mix the eggs, oil and sugar and beat until creamy.

Add the rest of the ingredients and mix thoroughly.
4.
Place the mixture in the loaf tins in the center of the oven and bake for 60-70 minutes.
