Grind all the dry masalas to make spice powder, keep it aside. Next, boil onions, cashew, green chillies, ginger and garlic in water. Drain it and make a fine paste, keep it aside. Blanch the methi (fenugreek) leaves. In a heavy-bottomed pan, heat ghee and saute the onion paste, till it releases oil. Add the green peas and pour in the milk, let it cook for a minute. Add the dry spice powder and coriander powder, mix well. Next, add the blanched methi, salt and sugar. Once it reaches a thick and creamy consistency, add cardamom powder, kasuri methi and cream. Mix it well and let cook till it is combined. Dhaba-style methi malai matar is ready!
