And if you look into these cuisines closely, you will also find some similarities in recipes, ingredients and flavours. Take chhena, for instance. A coarse version of paneer, it is used to prepare mithais, sabzi and more. One such popular chhena-based recipe is kofta. These koftas have a mild flavour and crunchy outer layer that makes the dish a perfect snack to chomp. And if added to tomato gravy, you will get a hearty bowl of kofta curry for lunch or dinner.

Again, this kofta curry sees different variations in the recipe. Some are prepared with simple chhena kofta, some add stuffing to it. This recipe has been shared by chef and food vlogger Ananya Banerjee on her YouTube channel. Chhena Devil Curry Recipe: How To Make Chhena Kofta Curry:

To make this dish, we first knead the chhena with some cashew nuts, grated ginger, chopped green chillies, maida and salt to taste. Keep aside.

Prepare the stuffing by grinding the soaked dal with some mustard seeds. Heat a pan and add the dal mix, kaloji, hing, finely chopped ginger and green chillies. Stir for a few minutes. Add salt, turmeric powder and mix well. And your stuffing is ready in no time.

Make balls out of the kneaded chhena and put the dal stuffing inside. Now fry them until the chhena balls turn golden in colour.

You can enjoy these chhena balls as is or add them to a delicious gravy. To make the gravy, pour oil into a pan and add jeera, hing, bay leaf and chopped onions in a pan. Add chopped green chillies, grated ginger and mix everything well. Add turmeric powder, cumin powder, coriander powder and red chilli powder and mix well. Add water to it and bring the gravy to a boil. Add the chhena balls and cook for some time.

Finally, add some garam masala, chopped coriander leaves, green chillies and serve.
