Lasith Malinga recently gave his family's breakfast a sweet twist by whipping up mini pancakes

There is something about a stack of fluffy pancakes that can instantly make breakfast feel a little more special. Whether topped with fresh fruit, drizzled with chocolate sauce or paired with creamy yoghurt, pancakes can turn an ordinary morning meal into a fun family spread.

Lasith Malinga recently gave his family's breakfast a sweet twist by whipping up mini pancakes and serving them with an array of delicious toppings. The video, shared on Instagram, showed the former Sri Lankan cricketer flipping mini pancakes in a pan. Once ready, he transferred them onto a plate and began assembling the breakfast spread.

For the presentation, Malinga first arranged cut-up strawberries on the plates before placing stacks of mini pancakes on top. He then finished them with chocolate pieces, chocolate sauce and condensed milk, serving each plate with a side of yoghurt and granola.

Ingredients

  • 1 cup all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tbsp white sugar
  • 3/4 cup milk
  • 1 small egg
  • 2 tbsp butter, melted

  • Maple syrup or honey
  • Mixed berries (or any other mixed fruit of your choice)
  • Powdered sugar

Instructions

  • In a large bowl, combine all the dry ingredients. Make a well in the centre, then add the milk, egg and melted butter. Whisk until you get a smooth batter.
  • Heat a lightly greased frying pan over medium-high heat. Pour about ¼ cup of batter onto the pan for each pancake.
  • Cook until golden brown on both sides, then stack two to three pancakes on each plate.
  • Dust with powdered sugar and garnish with a handful of mixed berries. Serve with melted butter and maple syrup on the side.
