Mathri is a traditional Indian biscuit recipe which is enjoyed mostly as an evening snack with a cup of tea. This recipe is a different and healthier option as it is made by using almond millet and served with savoury chilli yogurt dip.

Ingredients of Almond Millet Mathi & Chilli Yoghurt Dip
- 1/2 Cup Whole almond
- 1/2 cup Pearl millet flour
- 1/4 cup All Purpose Flour
- 1/2 cup Almond flour
- 3 tbsp Chopped onion
- 2 tbsp Chopped ginger
- 1/2 tsp Chopped green chilli
- 1 tbsp Chopped fresh coriander
- 1/2 cup Mashed boiled potato
- 1 tsp Chaat masala
- to taste Salt
- 1 tsp Dry roasted coriander seeds
- Desi ghee for pan searing
- For Chilli Yogurt
- 1 cup Greek yoghurt
- 1/4 tsp Chopped deseeded green chilli
- 1/2 tsp Chopped ginger
- 1/2 tsp Chopped fresh coriander leaves
- 1/2 tsp Crushed dry roasted cumin seed
- to taste Salt
How to Make Almond Millet Mathi & Chilli Yoghurt Dip

Roast almond in preheated oven at 180-degree celsius for about 4 minutes and cut them roughly, once cooled down.
For chili yoghurt dip

In a bowl, combine greek yoghurt, chopped ginger, chopped green chilli, chopped fresh coriander leaves. Mix well and season the mixture with salt and pepper.

In a mixing bowl, combine pearl millet flour, all-purpose flour, almond flour, chopped ginger, chopped green chilli, chopped onion, grated boiled potato, roasted coriander seeds, salt, chaat masala, chopped fresh coriander leaves and roasted almond.

Make soft dough and keep aside for 30 minutes to rest.

Portion the dough in 15 gm and roll it in 3 inch diameter disk with 1 cm thickness. Now, cook these sheets on medium flame using ghee till golden colour.

Serve along with chilli yogurt dip and enjoy.
