- 800 gms Golden Status 60% + T65 40% Flour
- 17.9 gm Sugar
- 17.9 gm Salt
- 22.3 gm Dry Yeast
- 89 gm Soft Butter
- 26 gm Format
- 178 gm Levain
- 446 gm Milk
How to Make Harry Rolls
1.
Add flour, sugar, salt, dry yeast, levain, and milk to the mixing bowl.

Mix for 6 minutes on slow speed, then 1 minute on fast speed.

Add the soft butter and continue mixing until the dough is smooth and elastic.
4.
Rest the dough in the chiller until fully relaxed.
5.
Prepare a 1600 g dough block for lamination.

Laminate with -, using 1 book fold and 1 single fold.

Sheet the dough to 2.5 mm thickness, maintaining a width of approximately 25 cm.

Roll the dough tightly like a Swiss roll.

Cut into 25 mm thick pieces.

Tuck the tail underneath each roll before proofing.

Proof until light, airy, and well risen.

Sprinkle sea salt on top before baking.
