Lamb Chops with Sweet Potatoes & Prawns Recipe

Ingredients of Lamb Chops with Sweet Potatoes & Prawns
- 5 Tbsp olive oil
- 3 Tbsp honey
- 2-3 Tbsp lime juice
- 2 racks of lamb / 8 lamb chop
- 1 golden kumra / sweet potato
- 1 white kumra / sweet potato
- 1 cup of chopped kale / baby spinach
- 500 gm medium sized prawns
- Salt to taste
- For the lamb dressing:
- 4 Tbsp olive oil
- 2 Tbsp lime juice
- 2 tsp lemon zest
- 2 anchovies, finely chopped
- 3 Tbsp parsley, finely chopped
- 3-4 garlic cloves, finely chopped
- 3 Tbsp thyme leaves, finely chopped
- Salt to taste
How to Make Lamb Chops with Sweet Potatoes & Prawns

Mix all the ingredients for the lamb dressing together and rub it into the lamb. Keep aside.

Roughly chop the sweet potatoes and mix them with 3 Tbsp of honey & 3 Tbsp of olive oil. Add salt to taste.

Place them with the marinated lamb on tray, pour some more honey over the chops and bake in a preheated oven at 200 degrees Celsius for 20 minutes, till medium rare.

Meanwhile in a pan heat 2 Tbsp of olive oil, saute the prawns for 2 minutes & add salt to taste.

Add the lemon juice and kale, cook for 3 minutes.

Once the chops are done, add the prawns to the tray and mix it all together.
7.
Serve hot.
