Ingredients of Mint Cream

  • 4 egg yolks 90 gm castor sugar 1/2 litre cream 3 tbsp whole mint leaves

How to Make Mint Cream

Scald the cream over a moderate flame. Infuse with the mint leaves. Cover and set aside for fifteen minutes. Strain. Reheat the cream. Beat the egg yolks and sugar together until light in color, pour on the hot flavored cream. Stir to mix. Strain into an oven-proof dish to a depth of about 2". Set into a water bath and gently poach or bake in a cool oven at 160 degree centigrade. Remove from the oven. Chill overnight and serve dredged with icing sugar.
