Ingredients of Paneer Moti Pulao
- 100 gms Paneer
- 1 cup Basmati Rice
- 2 large Onions (Sliced)
- 1 tsp Cumin Seeds
- 1/2 cup Ghee
- 2 Bay Leaves
- 2-4 Green Cardamom
- 1 Black Cardamom
- Small piece cinnamon stick
- 1 small Javitri
- Kesar (optional)
- Cashews and Raisins (optional)
- Peas (optional)
- Salt according to taste
How to Make Paneer Moti Pulao

Wash rice thoroughly and soak for some time. In a thick bottomed pan, add rice, enough water to submerge the rice, some ghee, whole spices, and some salt. Let this boil until the rice is 70% cooked.

Take off the rice and spread it on a flat bottomed surface to stop the cooking process.

Take the paneer and add a pinch of salt to it, mash well and make tiny pearl size balls out of the paneer.

Slightly sauté them until lightly golden. Try not to brown them. Keep aside.

In a pan add ghee and sauté cashew and raisins if you are using them.

Keep them aside and in the same pan add cumin seeds, one sliced onion, peas if you are using it, and cook until onions and peas are soft.

Add cooked rice, cashews, and raisins and mix well. Now add fried onions on top, Kesar milk if you have prepared it, paneer pearls, and cover with a lid. Let this cook in dum for 5-10 minutes. Serve when done.
