Ingredients of Gongura Kodi Pulao

  • 2 Cups basmati rice
  • 1 chicken, cut into small pieces
  • 1 cup gongura leaves (also known as sorrel leaves), finely chopped
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 Inch ginger, minced
  • 2 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp coriander seeds
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • 2 cup water

How to Make Gongura Kodi Pulao

1. Rinse the rice and soak it in water for about 30 minutes.
Heat the oil in a pan and add the cumin seeds, mustard seeds, and coriander seeds. Let them splutter.
Add the onions and sauté until they are translucent.
Add the garlic and ginger and sauté for a few more minutes.
Add the chicken and cook until it is fully done.
Add the gongura leaves, green chilies, cumin powder, coriander powder, and salt. Sauté for a few more minutes.
Add the soaked and drained rice and stir well to coat the rice with the masala. Add the water and bring it to a boil.
Reduce the heat to low, cover the pan, and simmer until the rice is cooked and the water is absorbed. This should take about 15-20 minutes.
Fluff the rice with a fork and serve hot.
