Ingredients of Seafood Platter
- 5-6 Oysters or as many as you will serve
- 5-6 sea prawns
- 5-6 green mussels
- For the red chilli dip:
- 1 tsp chopped garlic
- 1 tsp chilli paste (Whole red chillies ground with a little water)
- 1/4 cup water or stock
- 1 tsp coriander stems, chopped
- 1/2 tsp lemon grass
- 2 tsp white vinegar
- 1 tsp chopped basil
- To make the green chilli dip:
- 8-10 green chillies
- 1 tsp fish sauce
- 1 tsp sugar
- 2-3 tsp lemon juice
How to Make Seafood Platter
For the red chilli dip:
1.
Add all the ingredients and make a sauce over slow heat.

Add chopped basil leaves.
To make the green chilli dip:

Grind all ingredients into a paste.

Remove the head and de-vein the prawns.
4.
Steam the prawns and mussels in their shells.
5.
Serve all three starters with the dips.
