Steamed prawns, oysters and mussels served with red chilli and green chilli dipping sauces.

Ingredients of Seafood Platter

  • 5-6 Oysters or as many as you will serve
  • 5-6 sea prawns
  • 5-6 green mussels
  • For the red chilli dip:
  • 1 tsp chopped garlic
  • 1 tsp chilli paste (Whole red chillies ground with a little water)
  • 1/4 cup water or stock
  • 1 tsp coriander stems, chopped
  • 1/2 tsp lemon grass
  • 2 tsp white vinegar
  • 1 tsp chopped basil
  • To make the green chilli dip:
  • 8-10 green chillies
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 2-3 tsp lemon juice

How to Make Seafood Platter

  • For the red chilli dip:
  • 1.Add all the ingredients and make a sauce over slow heat.
  • 2.Add chopped basil leaves.
  • To make the green chilli dip:
  • 1.Grind all ingredients into a paste.
  • 2.Seafood:
  • 3.Remove the head and de-vein the prawns.
  • 4.Steam the prawns and mussels in their shells.
  • 5.Serve all three starters with the dips.
