Spinach Pesto Recipe: This no-basil pesto can be enjoyed as a dip, spread or sauce. It retains most of the other ingredients of classic pesto and is filled with refreshing flavours. This delicious and nutritious spinach pesto can be prepared very quickly.

Ingredients of Spinach Pesto
- 1 Cup Spinach, chopped
- 2 garlic cloves
- 1/2 cup cheese (parmesan preferred), grated
- 1/3 cup pine nuts (or cashews/ almonds)
- 1/2 tsp salt
- Pinch of pepper
- 7 tbsp (approx 100ml) extra virgin olive oil
- 2 tbsp lemon juice
How to Make Spinach Pesto
1.
Blend all ingredients together in a mixer/ food processor until you get a smooth paste.

Add more olive oil for a liquid sauce-like consistency. Reduce oil quantity for a thicker spread.
3.
Taste and adjust salt and pepper as required.
4.
Enjoy fresh or freeze for future use.
