Ingredients of Spinach Pesto

  • 1 Cup Spinach, chopped
  • 2 garlic cloves
  • 1/2 cup cheese (parmesan preferred), grated
  • 1/3 cup pine nuts (or cashews/ almonds)
  • 1/2 tsp salt
  • Pinch of pepper
  • 7 tbsp (approx 100ml) extra virgin olive oil
  • 2 tbsp lemon juice

How to Make Spinach Pesto

Blend all ingredients together in a mixer/ food processor until you get a smooth paste.

Add more olive oil for a liquid sauce-like consistency. Reduce oil quantity for a thicker spread.

Taste and adjust salt and pepper as required.
