Ingredients of Thai Sweet Potato Soup
- 1-2 Tbsp Vegetable oil/ olive oil/ sesame oil
- 5 cups Sweet Potatoes (peeled and chopped), chopped
- 1 Onion, chopped
- 3 Carrots (optional)
- 2 tbsp Thai red curry paste
- 2 Garlic cloves
- 1 tsp Ginger, finely chopped
- 4 cups Vegetable stock
- 1 tbsp Soy sauce
- 300 ml Coconut milk
- Salt and Pepper to taste
How to Make Thai Sweet Potato Soup

In a pot over medium heat, heat oil and saute the onions. Once they have softened, add the garlic, ginger and red curry paste. Mix together for 2 minutes

Next, add the sweet potatoes and carrots and stir-fry them for around 5 minutes.

Pour in the vegetable broth and coconut milk. Add the soy sauce and stir to combine all the ingredients well.

Once the broth is boiling, lower the heat and cover the pot. Let the veggies cook for 20-30 minutes and stir occasionally. Allow the broth to simmer.

Once the potatoes are soft, turn off the heat and allow the mixture to cool for 5 minutes before adding it to a blender. Blend to form a smooth, thick soup. Add more broth or coconut milk as required. Taste and add salt/pepper/seasonings as you wish.

Serve hot and garnish with coriander, peanuts or a drizzle of coconut milk.
