Ingredients of Roasted Broccoli Soup

  • 6 Cups Broccoli florets, chopped
  • 1 small Onion (quartered)
  • 4 Garlic cloves
  • 3 tbsp Olive oil
  • Salt to taste
  • 1/2 tsp Black pepper
  • 3 cups Vegetable broth
  • 1/2 cups Coconut milk (optional)
  • 2 small Potatoes (diced) (optional)
  • 1/2 tsp Dried thyme (optional)

How to Make Roasted Broccoli Soup

Roast the broccoli florets, onions, potatoes (optional), garlic cloves in olive oil in a saucepan. (You can bake them in an oven too; preheat to 400 degrees F and bake for around 30 minutes). Season with salt and pepper

Once the vegetables are lightly browned, transfer them into a blender. Add vegetable broth. For a creamier texture, you can also add a bit of coconut milk.

Blend for around 2 minutes to form a smooth puree.

Taste the mixture and add seasonings of your choice. Mix well.

Serve the soup piping hot. You may need to reheat it after blending. Garnish with coconut milk, roasted broccoli florets or cheese croutons.
