To begin with the recipe, marinate the mutton keema (minced mutton) with a few tbsp of vinegar, fenugreek leaves, garlic paste, ginger paste, salt and black pepper as per taste. Refrigerate the meat mixture, covered, to marinate for some time.

Now, take it out and leave for 15 minutes. Once done, start shaping the mixture with your hands. Shape them into long 'tubes' around the skewers (seekhs) and place on to a grill over a drip tray.
