This yellowish-orange fleshy fruit, apricot is said to be one of the healthiest fruits in the world, with loads of benefits and is as popular raw as it is cooked. It is a rich source of vitamin A and fibre, and is also a highly versatile fruit that is most popularly eaten raw but is also added in cereals, parfaits, jams and preserves due to its sweet flavour. Chicken khubani masala has chicken marinated in a pool of spices, including cinnamon and red chilli. It is then cooked in a curry made of spices and herbs such as bay leaf, cloves, cardamom, pepper corns and turmeric powder along with tomato puree and a puree made of dried apricots, soaked overnight. The chicken pieces are simmered well with dried apricot pieces and apricot water until the flavour has seeped in. The addition of curd and lemon balances the sweet flavour.
