The humble khichdi is not just any ordinary meal; even though it falls in the category of simple Indian meals, it carries a lot of weight in terms of nutrition and taste. This particular recipe from YouTube channel 'Cooking With Reshu' also brings in veggies like cauliflower, carrots and peas, but you can pick your own vegetables of your choice. The khichdi is cooked as usual, in a pressure cooker, with the addition of the vegetables. Then add buttermilk, mixed with gram flour (besan) is added to it to round off the dish. Just make sure to add only a bit of besan for density; don't overdo it. 

Chaach Wali Khichdi Recipe: How To Make Chaach Wali Khichdi 

Here's the step-by-step recipe of chaach wali khichdi for you to try at home. 

Step 1 - Heat ghee in a cooker, add cumin seeds, hing, and let them splutter.  

Step 2 - Add ginger, green chilli, tomatoes, turmeric powder, red chilli powder and salt to taste. Cook till oil leaves the sides.

Step 3 - Add cauliflower, carrots and peas, and roast well. 

Step 4 - Add soaked rice, some moong dal, and arhar dal. Add water as per the consistency desired, and pressure cook.

Step 5 - Add some besan in buttermilk, mix well and add to the khichdi and cook again for 5-6 minutes. 

Step 6 - Add garam masala powder and chopped coriander leaves. Serve hot with a dollop of ghee.
