It's that time of year when family members and relatives get together to make a whole lot of sweet treats at home. Yes, we are talking about one of the most loved festivals - Diwali. Right from kaju katli, shakkar paras, halwa, ladoos, gulab jamun to some healthy options nowadays including sugar-free sandesh, dry fruits ladoos, coconut ladoos among others, you would find several treats in Indian households. By the way, are you a sweet lover too? But if you do not want to indulge in the long tiresome process of cooking up desi delights, there are some easy options too. Chef Ranveer Brar has shared a recipe for mouth-watering boondi ki barfi on Instagram. Do check it out and include it in your Diwali menu.

Diwali 2022: Boondi Ki Barfi Recipe I How To Make Boondi Ki Barfi:

Ingredients:

For batter

  • Gram flour – 1¼ cups
  • A pinch of salt
  • Ghee ½ tablespoon
  • Water
  • Saffron water – 1 tablespoon

For sugar syrup

  • Milk - 2 cups
  • Sugar – 1 1/3 cups
  • Cardamom powder - ¼ tablespoons
  • Rose water – 2 tablespoons

Other ingredients

  • Almonds (chopped) – 4-5
  • Pistachios (blanched) – 4-5
  • Cashew nuts (chopped) – 4-5
  • Saffron strands (a few)
  • Mawa – 1/3 cup
  • Ghee (for greasing)

For garnishing

  • Pistachios (blanched) – 4-5
  • Few saffron strands
  • Silver varq
  • Fresh rose petals

This is how you can prepare boondi ki barfi:

 Step 1: Take a bowl and put gram flour with a pinch of salt, ghee into it. Mix well.

Step 2: Now, you need to add saffron water and normal water to it. Blend everything nicely and prepare a smooth batter (just like the dosa batter). Make sure there are no lumps. Just leave it like that for about ten minutes

Step 3: Meanwhile, prepare sugar syrup in a sauce pot. Take milk, and sugar and cook it on medium flame. Keep stirring it until the sugar gets fully dissolved. Once done, add rose water, and cardamom powder and mix well. Keep it aside for further use.

Step 4: Heat some oil or ghee in a kadai and take a perforated spoon. Start dropping small rounds of batter into the hot oil or ghee. Deep-fry the boondis until they turn golden and crisp. The other process of making boondis is to just dip your fingers into the batter and drop the batter into the oil as shown in the video. Drain the excess oil in a tissue. Repeat this process for the rest of the batter.

Step 5: Now, add the fried boondis to the sugar syrup you prepared and lightly fold to make sure that the boondi absorb the sugar syrup well. Put almonds, cashew nuts, pistachios, a few saffron strands, mawa and mix well.

Step 6: Transfer the mixture to a greased pan and spread evenly. You can press with the palm to set it properly.

Step 7: Let it rest at room temperature or refrigerator for 20 minutes and you are good to go. Start cutting the pieces and your sweet dish is ready. Garnish boondi ki barfis with pistachios, saffron strands, silver varq, and rose petals.
