- 1 cup Quinoa
- 1 1/2 cup Water
- 1/2 tsp Salt
- 2 cups Chopped kale
- 1/2 cup Diced red onion
- 1/2 cup Diced red bell pepper
- 1/2 cup Diced cucumber
- 1/4 cup Crumbled feta cheese
- 1/4 cup Pumpkin seeds
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1/4 tsp Salt
How to Make Kale And Quinoa Salad

Rinse the quinoa in a fine-mesh strainer. In a medium saucepan, bring the water and salt to a boil. Add the quinoa, reduce the heat to low, and cover.
