Ingredients of Strawberry Basil Feta Salad

  • 2 Cups Strawberries
  • Basil leaves
  • Feta cheese, PDO from Greece
  • 6 cups Mix of baby spinach and arugula
  • 2-3 tbsp Aceto balsamico di modena, PGI from Italy (balsamic vinegar)
  • 3 tbsp Sugar
  • A handful of walnuts
  • 2 tbsp Grain mustard
  • 2-3 tbsp Honey
  • 1 tsp Black pepper
  • Pinch of salt

How to Make Strawberry Basil Feta Salad

Wash and slice the strawberries into fours. Wash and dry the mix of baby spinach and arugula.

In a small saucepan over medium heat, caramelize the sugar and then add a handful of walnuts and toast the nuts for a few minutes until they are golden brown. Remove on a parchment sheet and let them cool and then chop them.

For the strawberry honey vinaigrette, Blend together the balsamic vinegar, grain mustard, honey, 3-4 strawberries, black pepper and salt to taste. Mix and taste to adjust.

To serve, spread the greens on a plate and top with strawberries, torn basil leaves, caramelized walnuts, feta cheese crumbles, vinaigrette, and several grinds of black pepper.
