- 2 Eggs
- 1 cup Poha (flattened rice), soaked
- 1 Onion, finely chopped
- 1 Tomato, finely chopped
- 2 Green chillies, finely chopped
- 1 tbsp Oil or ghee
- 7-8 Curry leaves
- 1/2 tsp Mustard seeds
- 1/2 tsp Turmeric
- 1/2 tsp Red chilli powder
- Salt to taste
- 2 tbsp Fresh coriander leaves (for garnish)
- 2 tbsp Lemon juice
Step-by-Step Recipe To Make Egg Poha At Home
Soak The Poha
Take the Poha in a bowl and rinse it under running water. Keep it aside for 5 minutes so it softens.
Prepare The Tadka
Heat oil or ghee in a pan. Add mustard seeds and curry leaves. Once they crackle, add chopped onion and green chillies. Cook for about 2 minutes.
Add The Tomato
Add the chopped tomato and cook for another 2 minutes. Now add red chilli powder, turmeric, salt, and coriander powder (optional).
