Ingredients:


• 1 tablespoon olive oil
• 1/2 medium onion chopped finely
• 1 Cup of mushrooms chopped
• 2 cups of boiled and shredded chicken
• 3 cups of water
• 2 large carrots peeled & sliced thin
• 3 cloves garlic minced
• 1 and a half cups of chicken broth or stock
• Salt & pepper to taste

Method:

1. In a pan, add olive oil and onion and saute for five minutes over medium heat.
2. Next, add garlic and mushroom and saute for 4-5 minutes.
3. Once the contents are nicely sauteed, add carrots, chicken stalk, and water, and increase the flame. Let it come to boil.
4. Add the chicken, reduce the heat and let it simmer for 8-9 minutes.
5. Now, add salt and pepper to taste.
6. Serve hot. Garnish with thyme and mixed Italian herbs.
