Probably all of us eat salad along with our daily meals. Be it with chicken and rice or dal-chawal, or even as a snack - salad plays a constant role in our diet. However, it remains quite underrated, when we describe or discuss a traditional desi thali. Desi salad, unlike the exotic salad bowl, is quite simple, hearty, and can be made with simple foods like onion, cucumber and tomato. People also like to add beetroot, radish, capsicum, cabbage etc. in their salad mix. To this, some add simple salt and pepper, and some like to keep it elaborate and add lime juice, sauces etc. to it. In fact, different regional cuisine has different salad mix. For instance, North Indian kebabs come with onion lachcha.

We recently tried another unique kind of salad from Maharashtra called koshimbir. Koshimbir is basically a simple onion salad that includes salt, sugar, green chillies etc in it. It is simple, hearty and loads you up with a good amount of healthy nutrients, thanks to the ingredients used. Besides, it cleanses the palate and adds crunch to the meal. This particular recipe has been shared by celebrity nutritionist Rujuta Diwekar on Instagram. She mentions that for this recipe, one must use small white onions, not the regular ones.   • Wash and chop the onions.
  • Add salt, sugar, chopped green chillies and crushed roasted peanuts to it.
  • Mix everything together and let it set for sometime.
  • Meanwhile, arrange your meal together.
  • Take some koshimbir by the side and relish.
