Barfi is an all-time hit traditional Indian dessert, and coconut barfi is one of the most loved ones out of the many barfi varieties out there. The nutty flavour and creamy texture of coconut is imbibed to make the delicacy that always steals the show on an Indian dessert platter. If you ever crave for coconut barfi and don't have time and ingredients, here's a recipe that lets you make your favourite sweet with easily-available bread, that too in all of 15 minutes.
You just need to assemble a handful of common ingredients - coconut, sugar, ghee, almonds, cashews and bread slices. Remove the dark sides of the breads and grind the slices to make bread crumbs. Grind or grate coconut pieces also to turn them into a grainy powder. Then soak the bread crumbs in some milk and keep aside to let it soft and mushy. Next, crush or grind almonds and cashews. Now, you are all set to make your bread barfi.

Saute grated coconut and sugar in a pan with ghee, add crushed almonds and cashew nuts, and milk-soaked bread crumbs. Mix well and cook for about 10 minutes. Lastly, add cardamom powder. Spread the barfi mix on a greased plate and let it cool down to room temperature. Then place it in the refrigerator for some time to set. Cut it into desired shapes and garnish with dry fruits of your choice before serving.
