Wash and soak chickpeas with salt in water overnight and cook in a pressure cooker until tender. Make a curd paste by adding spices like cumin powder, coriander powder, kasuri methi, red chilli powder, turmeric powder and more.
Heat mustard oil in a pan and add cumin seeds, bay leaves, cardamoms and whole red chillies. Let them sizzle and release their aroma. Add besan, roast it for a few minutes and then add the curd mixture. When it starts releasing oil, add oiled chickpeas, mix well, and cook for a few minutes.
