To make this tasty and healthy dal, you will first have to wash the toor dal and cook it in a pressure cooker for 2 to 3 whistles. Wash the spinach, chop it finely and keep it aside. Now add two tablespoons of desi ghee in a pan and heat it. You can increase or decrease the quantity of ghee as per your convenience. First of all, add asafoetida, cumin seeds, and finely chopped onion in hot ghee and fry for 2 to 3 minutes. Meanwhile, add finely chopped ginger to it and fry it well.
Add finely chopped tomatoes, sprinkle salt as per taste and cook till the tomatoes become soft. After roasting the tomatoes, add turmeric, red chilli, coriander powder, and garam masala and sauté it while mixing well. Now add finely chopped spinach to it, mix it with spices and cook for some time. Sprinkle some water, cover the lid and let the spinach cook for 2 to 3 minutes. After some time, remove the lid, add boiled lentils to it and mix it with spinach. Let both things cook for some time. If you want, you can add a little lemon juice here. This adds a tangy flavour to the dal. Garnish with green coriander and turn off the gas.
