For the unversed, mango curry is not exactly a curry; it is a kind of pickle or chutney that is served as a side dish. Also known as manga curry, this spicy, sour, fresh pickle is often served at South Indian weddings. This mango pickle uses unripe mangoes with skin.

Mango Curry Recipe: How To Make Padma Lakshmi's Mango Curry

To make this mango curry, you'll need green/unripe mangoes, oil, mustard seeds, chilli powder, hing and salt. Start by finely chopping the green mangoes; make sure to cut them into small pieces. The reason that the mangos are cut so small is so that more surface area can easily absorb the delicious spices. Now, you'll need to make a tadka. For that, take a small kadai or pan and heat oil. Padma Lakshmi recommends using neutral oil with a high smoke point. Add the mustard seeds and hing, remove it from heat once it starts to splutter. Pour the tadka over the chopped mangoes, sprinkle red chilli powder and salt according to taste and mix it well. The mango curry is ready!
