Chips may be the most loved dry snack we know of! Available to us in different shapes, sizes and flavours, a packet of chips can easily be found in almost any part of the world. The feeling of biting into a crispy and crunchy chip is just delightful, isn't it?! We Indians have our fair share of chips variety that is indigenous to us, ranging from banana chips, moong dal chips and even baingan chips. Today, we have found the recipe for another delicious desi chip that can be easily made at home and it is none other than sabudana chips.
Sabudana, also known as tapioca pearls or sago, is basically made of tapioca starch extracted from the roots of the cassava plant. While we all use sabudana to make khichdis and vadas, it is also popularly used to make snacks like fryums! Use the sabudana available at your home to make these fried chips.

Soak the sabudana overnight. Heat a pan and pour water, add the soaked sabudana. Cook the sabudana till it is mushy and liquidy. Season it with salt, lemon juice and pepper. You can also add food colouring at this stage if you want. Spread a plastic sheet, and pour a spoonful of the mushy mixture on the sheet; this should be about the size of the chips you desire. Make sure they don't touch each other. Let this sun dry for at least a day. Once the chips have taken their shape, deep fry them like you'd deep fry fryums.
