When making the sauce you need to be very careful of the temperature at which you are cooking it; you also need to stir it well and consistently, if you want to get the desired consistency. Next thing you need to keep in mind is the sequence of ingredients in the recipe. Remember, it is a sauce and not another stir-fry where you can throw in veggies and spices whenever you feel like. In this video, Chef Banerjee adds some water and sugar and gives it a nice mix until it starts to turn golden brown. Next, comes the butter and then the cream, which also needs to be mixed well until you get the perfect consistency. If you are using unsalted butter, add a pinch of salt to the sauce. If your butter is salted then there is no need.
