For most of us, it's difficult to imagine the winter season without a wholesome meal consisting of sarson ka saag, makki ki roti along with dollops of makhan on top. Do you agree? Besides its heavenly taste, the other convincing reasons to relish sarson ka saag are related to its health benefits. So, have you tried your first sarson ka saag this season? If not, you must cook it up right away. Chef Saransh Goila has shared the recipe through a video on Instagram. In the caption, he stated, “My first Sarson ka Saag this season! Do you like it with tamatar or without? Safed Makhan or ghee? Makai roti ya paratha?” He further also mentioned his recipe includes five greens - sarson, bathua, mooli ke patte, palak and methi.” 

Going by his video, Saransh Goila, first, took the five green leafy vegetables and cleaned them. Later, he pressure-cooked the leaves with chopped garlic, ginger, green chillies, and water. Once done, the chef mashed the leaves altogether. He added some makai ka atta to it, along with salt. Cooked well for ten minutes. In a separate handi, Saransh heated some ghee along with jeera, chopped ginger, garlic, onions, tomatoes, coriander powder and salt. After sauteing the onions and tomatoes, he added the saag into it and mixed everything perfectly. While it was cooking, Saransh quickly prepared a tadka using ghee, hing, and red chillies and poured it over the saag. You can follow the same process and prepare sarson ka saag for yourself. Enjoy it with white butter.

To make the chutney, sieve the overnight soaked tamarind and remove the pulp. Add some onions, green chilli, ginger, coriander, and mint leaves to it. Put a mix of anardana and coriander seeds. Now, you'll need some jaggery and red chilli powder. Put black and white salt as well. Finally, add boiled potatoes and some water. Give it a good mix.
