How To Make Baingan Ka Bharta:

Smoke some eggplants on a burner to give a charred taste. Then peel off the outer skin, mash and cook with onion, tomato, and spices. A lip-smacking treat is ready. Serve it with some piping hot rotis (flatbread). Click here for the recipe.

Another way of preparing baingan ka bharta is using the microwave method. Heat the eggplants on a direct flame or under a grill till a light brown texture doesn't appear. Prick in a few places all around, cook covered at HI for 10 minutes, and once it gets cold, peel off the skin and mash the flesh. Saute some onions, add the spices, add the mashed flesh, and cook it in the microwave. Use coriander leaves to garnish and serve. Click here for the full recipe.
