Maya at Trident Bandra Kurla is hosting a traditional Rajasthani food festival you don't want to miss. Named "Laapi Chokha," this experience has been curated by Chef Sangeeta Dhar and Chef Vimal Dhar, who specialise in this cuisine. The menu celebrates rural and royal recipes from the heart of Mewar and Marwar, spotlighting lesser-known ingredients and niche delicacies. We had the chance to taste many of them and we were left amazed by the rich variety of flavours and the wholesomeness of the rustic dishes. The special menu is available as thali options (veg and non-veg) as well as a la carte. Among the veg delights, we loved the khatte bahrwan mirchi pakore, dhubgar gavar falli bhuji, kowar chawle ka kheechda and phogle ka raita and others. Among the non-veg dishes, a special mention for the Macchi ki Peti - an amazingly soft and aromatic freshwater fish fillet stuffed with dry fruits and coated with moong. Other scrumptious highlights include the Mahua chicken, Mewari Jungle Maas and Murgh Ka Mokal. We relished the gravies with Barma Chikoo Baati, Saata Roti and Jowar Ajwain Khooba Roti. We ended our feast with some delicious Lehsun Ka Halwa and Parodi - both of which are a must-try. We highly recommend this experience to anyone who wishes to discover just how diverse Rajasthani cuisine is. It was a truly memorable meal!
