Onam 2021 has begun today, and this 10-day long harvest festival is all about celebrations, boat races, rangolis, prayers and of course, delicious food! All the family members gather together and prepare lots of food items to have throughout the day. So, if you want to mark your Onam with something special this year, then today, we bring you an easy recipe of Kesari bhaat that melts in your mouth in the first bite and leaves a sweetness on your tongue.

This south Indian dessert cooked with rice, saffron and other things has a brightish orange colour that catches your eye and makes you want to indulge in this dessert. The soft texture of Kesari bhaat is worth devouring, and you will love making it with your family members.

First, wash the rice and boil them. Then, in a heavy-based pan, heat the ghee, fry the raisins and almonds, and saute until they change colour slightly. Remove the nuts and keep aside and add the rice, milk mixture, laung and elaichi. In the same ghee and mix well.

Lower the heat, remove half the rice and sprinkle half the sugar, and then layer the rest of the rice and the rest of the sugar over it. Put the lid on and place the pan over a griddle (Tawa) over low heat for about an hour.
