I usually add this special veggie to my salads and sandwiches; but this time, it decided to add it to my rice, because, why not? Rice is an extremely popular dish, not just in India, but across various other cuisines. It owes its ubiquity to its versatility. Steamed or fried, plain or spiced - there's a host of recipes around rice you can find everywhere you go. In India, if plain rice is the most common, pulao comes a close second. And when we talk about pulao, aloo pulao is what comes to the mind first. Here, we have a recipe that adds the distinct characteristics of beetroot. Aloo pulao becomes beetroot pulao with this easy-peasy recipe.
