That is why we have brought to you a special recipe video and it is called gobi kofta curry. As the name suggests, the kofta is made from grated cauliflower and bathed in a flavourful gravy of tomatoes, onions, garlic and more. This recipe is shared by YouTube-based food blogger Cook With Parul.

Gobi Kofta Recipe: How To Make Gobi Kofta Curry At Home

Grate cauliflower and squeeze the moisture from them. In a mixing bowl, add the grated cauliflower, ginger-garlic paste, chopped green chillies, chopped coriander, red chilli powder, turmeric powder, cumin powder, coriander powder and garam masala, mix well. Next, add besan, in batches, to bind the masala. Mix in salt and make kofta balls. Deep fry the kofta till it is golden.

Make a fine paste of onion and garlic, keep aside. Grind another paste of tomato, coriander and green chillies, keep aside. Mix coriander powder, turmeric powder, red chilli powder, cumin powder in water, and keep this aside as well.

Heat oil in a kadhai, add whole spices and saute. Pour the onion paste and stir till the raw smell goes away. Add the tomato paste, masala mixture and season with salt. Pour some curd and hot water and let the gravy cook. Add the kofta balls to the gravy right before serving the curry.
