One of the biggest festivals of the year, Diwali, is just around the corner. It is that time of the year when people are cleaning their houses, decorating them up with lights and rangoli, buying new clothes and more to celebrate the festival with utmost glory. Another important part of this celebration is food. During Diwali, we prepare a wide range of mithais and, of course, go on a bingeing spree. While some like to keep their mithai platter classic with laddoos, barfis and kheer, some go the extra mile to explore their creative selves. If you ask us, we love to have the best of both the worlds. Besides those traditional desi mithais, we also experiment with our recipes to offer something unique to friends and family.

This year, we are celebrating Diwali on October 24, 2022; which means, we have just no time for preparation. During our search for unique mithai recipes, we came across a chef's special recipe that gives a flavourful twist to the quintessential gond ke laddoo. How, you ask? The chef adds some gulkand to it. Sounds interesting, doesn't it? This particular gond-gulkand laddoo recipe has been shared by Executive Chef Suraj Kumar Sahoo from Novotel Vijayawada Varun. Take a look.

How To Make Gond-Gulkand Laddoo:

To make this dish, we need gond, atta, sugar, ghee, almonds, pistachio, cashew nuts, dates, gulkand and cardamom powder.

First, heat some ghee in a pan and add all the nuts and shallow fry. Cool and crush them coarsely in a blender. Keep them aside.

Heat rest of the ghee and add gond to it. Cook gently till gond gets puffed. Now strain the fried gond and cool. In the same ghee, add atta and toast until golden brown in colour. To it, add sugar and cardamom powder and mix everything together.

Now, to make the laddoo, take a large bowl and add atta, nuts, fried gond and mix everything together to get a binding texture. Make small laddoos by stuffing gulkand-date mixture in the centre.

Garnish with some crushed gond and almonds and your Diwali-special laddoo is ready to be relished.
